Buffalo Chicken Lasagna
Ingredients:
- 2 tbsp butter
- 2 tbsp flour
- 1 1/2 cups milk (I use skim, but any kind is fine)
- 1/2 cup chicken stock
- 1/2 cup sharp cheddar cheese, grated, plus more for garnish
- 1/2 cup hot sauce (I use Frank’s original hot sauce)
- 1 cup low-fat ricotta cheese
- Salt
- Freshly ground black pepper
- 1 rotisserie chicken, skin removed and shredded
- 4-6 oz bleu cheese, crumbled
- 1 small ball of mozzarella, grated
- 1 bunch of scallions, thinly sliced
- 9-12 sheets of lasagna pasta, cooked
