Buffalo Chicken Lasagna


Buffalo Chicken Lasagna

Ingredients:
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 1/2 cups milk (I use skim, but any kind is fine)
  • 1/2 cup chicken stock
  • 1/2 cup sharp cheddar cheese, grated, plus more for garnish
  • 1/2 cup hot sauce (I use Frank’s original hot sauce)
  • 1 cup low-fat ricotta cheese
  • Salt
  • Freshly ground black pepper
  • 1 rotisserie chicken, skin removed and shredded
  • 4-6 oz bleu cheese, crumbled
  • 1 small ball of mozzarella, grated
  • 1 bunch of scallions, thinly sliced
  • 9-12 sheets of lasagna pasta, cooked
