Broccoli Rice Casserole

Ingredients:
  •     ½ medium yellow onion, diced
  •     2 Tbsp olive oil
  •     1 cup long grain rice
  •     2 cups chicken broth
  •     one 14 oz. bag frozen broccoli florets
  •     one 11 oz. can cream of chicken soup
  •     ¾ cup shredded cheddar
  •     ¼ tsp cayenne powder (optional)
  •     to taste fresh black pepper
